Blueberry Cream Cheese Pound Cake

I’ve been wanting to write about this Blueberry Cream Cheese Pound Cake for a long time!!!
I have some recipes for pound cakes but I’ve never tried them before until a friend told me if I could bake this cake (she saw my Pin in Pinterest!) for her wedding! After this hit I did the Marble Loaf Cake, which was also great!
The first thing I did (even before telling her that I would do the cake) was to check the recipe. when I saw it was from The Novice Chef I knew I was going to do it! I just love her recipes!


What you need:

  • 1 1/4 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 stick (1/2 cup) butter, room temperature
  • 112 gr (4oz) cream cheese, room temperature
  • 2/3 cup sugar
  • 2 eggs
  • 1 tbsp vanilla extract
  • zest and juice of 1 lime
  • 1 cup fresh blueberries (plus extra for decorating)

For the Cream Cheese frosting:

  • 112 gr (4oz) cream cheese, room temperature
  • 4 tbsp butter, room temperature
  • 1 1/2 cup powdered sugar (I didn’t use all, I put some and tasted it until I liked it!)
  • 1 tsp vanilla sugar (I used vanilla sugar because I wanted the frosting to be completely white, but vanilla extract also works)

How to do it:

  1. Preheat oven 350F/177°C. Butter a loaf pan, line it with parchment paper and butter the parchment paper. (Is the best way to get the loaf out of the pan!)
  2. In a medium bowl mix together the flour, the baking powder and the salt.
  3. In a large mixing bowl beat together cream cheese, butter and sugar until light and fluffy. Add the eggs one at the time, mixing well each time and scraping the sides of the bowl when needed. Add the vanilla, lime zest and juice mixing until just combined.
  4. Add the flour and mix it gently with a rubber spatula until completely mixed, genlty fold in the blueberries.
  5. Pour the batter in the loaf pan and bake if for 50 – 60 min until a skewer inserted in the middle comes out clean. Let cool for 30min and remove from pan.
  6. Meanwhile, in a large bowl beat together the cream cheese and butter until smooth. Add the powdered sugar (put some of it and taste until is has the sweetness you want) and the vanilla sugar and beat until the frosting is smooth and with the right consistency.
  7. Carfully frost the pound cake, you can also decorate the frosting with some blueberries. Store it in the fridge until ready to serve.


The result: a perfect Blueberry Cream Cheese Pound Cake that everybody will love!!! The most difficult part is to wait while it is in the oven!!! Believe me you have to try this pound cake! Everybody loved it! And the frosting was OMG delicious!
