Homemade ravioli

Do you know what’s best of a wedding? (Other than getting married of course…) The gifts!!!

A group of friends gathered and gave us a pasta machine… OMG I love this gift! At first I thought it was going to be really difficult to do pasta from the very start, but the only way to really knew if it was going to be that hard or not was actually doing it! So Rigo, her husband, my husband and me put our hands to work and decided to cook some homemade ravioli.

Pasta ingredients:

  • 1 sp water
  • 500g pasta flour 00
  • 1/4 tsp fine sea salt
  • 4 medium eggs plus 6 yolks
  • 2 sp olive oil

Stuffing ingredients:

  • 2 sp olive oil
  • 1 minced garlic clove
  • 500g spinach leaves
  • 15g butter
  • 1/4 tsp nutmeg
  • Salt and black pepper
  • 200g goat cheese
  • 75g grated parmesan cheesen (as topping)
  • 1 beaten egg to blaze

For the pasta create a “volcano” with the flour and pour all the ingredients in its center. Start mixing and add the water until you get a smooth dough trying to get a ball (add more water if necessary). Wrap in a plastic and cool the dough for 30 minutes.

That’s it!!! The easiest part of all!

Now, for the stuffing slightly brown the garlic in olive oil and add the spinach leaves until they loose all their water. Increase the flame and add the butter, nutmeg, salt and pepper. Once they’re done chop the leaves and mix them with the goat cheese.

Cut the pasta in 8 pieces and knead them into balls; then work your magic with the pasta machine (the idea is to thin the mass gradually so you don’t break it until you get a real thin paste layer). If you don’t have a pasta machine, RELAX! Just use a roller.

Extend the pasta and add small balls of stuffing, separeted by at least 1 inch from each other and 1 1/2 inches from the border; then  add the beaten egg and fold the pasta pressing with your fingers between the stuffing and at the boarders. Cut the folded pasta in small squares.

Seriously, that’s it again! When you have all the raw ravioli, immerse them in boiling water with salt for no more than 5 minutes and enjoy!!!
