new recipe: carrot zucchini and apple bread

This weekend I decided to try out a new recipe: carrot, zucchini and apple bread. I chose this recipe because I wanted to prepare something healthy for the hubs and the kiddos, so when I came across the recipe while browsing on Pinterest I immediately knew I had to bake it.

The weather here has been COLD…. that has left me and the boys feeling a little blue, lying on the couch, covered in blankets with no desire at all to move. I’ve been trying to battle the winter blah’s with lots of vitamin D and trying to find creative ways to keep the kids entertained. I must confess some days it works and some days are just really long and boring; but now that my love for baking has returned I have been feeling very good about myself. I have also gone back to reading like a crazy person and I’ve been working hard on my knitting project, so that has helped lots. Keeping myself going and inspired through this inclement weather has been hard, but I always find some new project and I push myself hard to get everything done.

Now, back to the recipe, I did some little changes here and there, specially when it came to the frosting. I decided NOT to frost my bread because I wanted something really healthy for us to snack on. {note: please don’t get me wrong, I LOVE FROSTING, I just believe it’s better to avoid eating frosting at times… too much sugar!!}

Ok, so you can find the recipe here {please go to her website, have a look around and see all the yummy recipes she has there!!!! — yes I have a new favorite place for recipes!!!} And I’m also copying it here for you:

Ingredients

    • 1 cup unsalted butter, melted
    • 2 cups granulatd sugar
    • 3 eggs, room temperature
    • 1/4 cup fresh orange juice
    • 1 Tbls vanilla extract
    • 3 1/4 all-purpose flour
    • 1/2 tsp salt
    • 2 1/2 tsp baking powder
    • 3/4 tsp baking soda
    • 1 Tbls cinnmamon
    • pinch of ground cloves
    • pinch of ground nutmeg
    • 2 cups shredded carrots
    • 1 cup shredded zucchini (unpeeled)
    • 1 cup diced, peeled apple
    • 1/2 cup pecans, chopped (optional)
Frosting
  • 1/2 cup cream cheese, softened (I use light)
  • 1/4 unsalted butter, softened
  • 2 – 3 cups powdered sugar
  • 1-3 Tbls orange juice as needed

Instructions

    1. Preheat oven to 350 degrees.
    2. Grease and flour two 8×4 inch loaf pans.
    3. Blend butter, sugar, egg, orange juice, and vanilla together.
    4. Combine flour, salt, baking powder, baking soda, cinnamon, cloves, and nutmeg together.
    5. Fold dry ingredients into wet along with carrots, zucchini, apples, and pecans.
    6. Pour into prepared pans.
    7. Bake until golden brown, approximately 1 hour, or until loaves spring back when gently pressed with fingers.
    8. Let cool before icing.
Frosting
  1. Cream together cream cheese and butter. Add in powdered sugar and continue mixing. Drizzle in orange juice until desired consistency is achieved.
  2. Frost bread and enjoy!

Ok, I have a few notes on the recipe…

First of all use granny apples as they are in my humble opinion the BEST apples for baking, they are sweet but also a little bit acid so they are just perfect! I also didn’t use the grounded clove ( I didn’t have any and felt to lazy to actually ground the whole cloves I had… my bread tastes delicious so I’m sure it’s ok if you skip that ingredient). Don’t panic if when you mix all the ingredients together your batter turns out very dry… remember zucchini is ALL water, the bread isn’t going to be dry at all {I’m just letting you know this because I did in fact went into a OMG this is not going to be good phase… so just don’t worry, it will be delicious!!!}
